Kale Salad

Want to eat kale for the health benefits, but find it too chewy?  Well thanks to Daphne Oz, here is a solution to softening the kale leaves to use in a salad.   

Wash and remove the kale leaves from the stems.   Some people tear the leaves, I use a knife. 


Add just enough olive oil to the kale leaves allowing you to massage them to a softer texture.  


When adding the lemon juice, squeeze with the cut end up so you won’t get seeds in the salad.  Add additional olive oil to taste.


Finish the salad by adding diced apple, salt to taste, walnuts and grated parmesan cheese. 

This salad is deliciousness in a bowl.  You can change this salad by using different oils, and instead of lemon, use lime or orange, I have made this salad using a variety of berries, nuts and cheeses.  Use what’s in season and be creative. 

Kale Salad:
Kale, cleaned and deveined
1-2 Tbsp of olive oil
1 small apple
5 walnut halves (broken or whole)
2 Tbsp parmesan cheese
salt to taste
